Cozy Peanut Butter Jam Dots are simple, classic cookies–perfect for snacking, lunch boxes, or holiday baking. Made with nuts, oats, and whole wheat flour (with GF options), sweetened with real maple syrup, you'll hardly feel guilty having an extra one…or two of these when you're craving something sweet!


Ingredients

1 cup old-fashioned oats

1 cup raw almonds

1 cup whole wheat flour (or use brown rice flour or GF blend for GF option)

1/2 teaspoon salt

1/2 cup smooth (salted or unsalted) peanut butter

1/2 cup real maple syrup

1 teaspoon vanilla

1 8-ounce jar of your favorite jam


Directions

  1. Preheat oven to 350ºF. Line a baking tray with parchment paper.

  2. In a food processor, pulse oats till they are finely ground. Add almonds, and pulse again till they are finely ground. Add flour and salt. Pulse to combine.

  3. Add peanut butter, syrup, and vanilla to the dry ingredients in the bowl of the food processor and pulse to combine.

  4. Using a portion scoop or a teaspoon, scoop out the dough and place on the baking tray, about two inches apart. With a finger or end of a teaspoon, make an indent for the jam. Place about a half teaspoon of jam on each cookie and bake for about 12 minutes.

  5. Remove from oven and cool on the baking tray for about 5 minutes before transferring cookies to a wire cooling rack. Store in a covered container.
